The handle features reinforced black wood with resin added in a high pressure environment. The thin profile of this Japanese knife along with its super steel makes for scalpel-like sharpness. The VG10 core steel measures at 60 Rockwell Hardness and thus has excellent edge retention. SELLER'S OPINION: This knife has the same VG10 core steel as other more expensive Japanese knives . However, it is constructed with less metal in the handle (half tang) and without a bolster. As a result, this knife weighs less compared to full-tang knives but still has the razor sharp blade. This lightweight design suits home users or entry level chefs. This is an excellent knife for the price, great value. This knife is designed for dicing and slicing only. Like the majority of Japanese knives, it is NOT DESIGNED FOR CHOPPING BONES. To avoid chipping, please do not cut frozen foods or bones.
